The Small Axe Breakfast Pasta is still one of our best sellers and a dish we are now famous for; the pasta version of the magical combo - Bacon and Egg. Guanciale acts as the bacon in this story, an Italian cured pork jowl with a slow cooked gooey egg nestled in the middle of al dente maccaruni, a pasta that was traditionally made by rolling the dough around a knitting needle to achieve the long twisted shape. Peas and mint tossed in there for freshness. Topped with finely grated pecorino, to eat it you break the yolk and store in through to create a creamy carbonara(esque) sauce. It is everything you want in a bowl and it represents what Small Axe is about; simple, good quality ingredients served in a balanced modern way with a nod to our Italian heritage.
